Spaghetti Carbonara

A quick and easy pasta recipe that is one of my favourites.

Ingredients:

  • 1/2 lb. spaghetti
  • 4 slices bacon cut into 1/2 inch pieces
  • 3 eggs, lightly beaten
  • 1/4 tsp. salt
  • 1/4 c. 2 tbsp. light cream
  • 1/4 lb. crisply cooked bacon
  • 1/4 c. grated Parmesan cheese
  • Freshly grated pepper

Directions:

  • Cook spaghetti according to package directions. The spaghetti must be very hot when the eggs are poured over it so they will cling and continue to cook.
  • Fry bacon pieces until crisp.
  • Mix salt, pepper, eggs and cream together.
  • Drain spaghetti and place in a warm bowl
  • Add the egg and cream mixture to the spaghetti and toss to mix.
  • Sprinkle with bacon, Parmesan cheese and pepper and toss again.
