Italian Sausage Oven Stew
(Serves 4)
1 lb Mild Italian Sausage cut into 1 inch pieces
4 medium potatoes cut into 1 inch cubes
1 medium red onion chopped
2 carrots sliced
1 sweet bell pepper cut into 1 inch pieces
1 14 oz tin diced tomates
2 gloves garlic finely chopped
1 tbsn fresh rosemary finely chopped (or 1 tsp dried)
salt and pepper to taste
Combine all ingredients in a 9 x 13 inch pan. Cover with tin foil and place in 375 degree oven for 45 minutes. Remove the tin foil, stir ingredients and cook for a further 15 - 20 minutes uncovered.
Serve with garlic toast.
