Ingredients:
- 4 tablespoons Szechuan peppercorns (or you can substitute other peppercorns)
- 4 tablespoons whole cloves
- 4 tablespoons broken cinnamon sticks
- 4 tablespoons fennel seed
- 12 whole star anise
Directions:
- Place all the ingredients in a dry non-stick fry pan and toast lightly over medium heat.
- Remove from heat and let cool.
- Place in spice grinder and pulse until finely ground. You may need to grind in batches.
- Store in an air-tight container in a cool, dark place.

Yield: 2/3 cup
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.

4 Tbsp. coarse salt
1 Tbsp. ground black pepper
2 tsp. oregano
2 Tbsp. paprika
1 tsp. celery salt
2 tsp. dried thyme
1/2 tsp. ground rosemary
2 tsp. garlic powder
1 tsp. marjoram
1 tsp curry powder
Mix well and use according to taste.
