Middle Eastern Dish – rice with lentils and onions.
Ingredients:

2  each  large onion, thinly sliced
2  Tbsp  oil
2¾  cup  water
½  cup  brown lentils
1  cup  Basmati rice
1  tsp  salt
¼  tsp  black pepper

Directions:

Saute the onions in a non-stick pan until dark brown.
In a medium pot boil the water. Add lentils and simmer for 20 minutes.

Ingredients:

2 garlic cloves
1 19-ounce can chick peas (garbanzo beans)
3 tablespoons tahini
2 tablespoons lemon juice

I whipped this up a couple of nights ago, but I’m not sure what to call it; maybe some type of Middle-Eastern…? Any suggestions?

This recipe is from Real Simple magazine, which frequently has excellent meal ideas and recipes. It is a delicious and easy: I served it with pita bread and a cucumber and tomato salad. Great for summer. The falafel reheated well in the microwave the next day.
