<p class="subhead-light-brown">Preheat oven to 350&ordm;F (180&ordm;C). Line cookie sheets with parchment paper.</p>
<p><span class="subhead-dark-brown">Topping:</span></p>
<p>Combine sugar and cinnamon for topping.</p>
<p><span class="subhead-dark-brown">Cookies:</span></p>
<p>Beat shortening, butter and sugars until creamy. Beat in eggs, one at a time. Add next 6 ingredients, mixing until incorporated. Stir in chocolate chips.</p>
<p>Roll in 1&rdquo; (2.5 cm) balls, don&rsquo;t flatten. Roll into cinnamon and sugar topping. Place on prepared cookie sheets, about 2&rdquo; (5 cm) apart. </p>
<p>Bake 8-10 minutes. Cookies should still be soft in centre. Let cool on baking sheet for 3-5 minutes. Remove, cool on wire rack.</p>

<p>Cookies can be frozen raw and stored in an airtight bag or container. If baking from frozen, add 5 minutes to baking time.</td>

1/2 cup / 125 ml. - strawberry preserves</p>
<p>Method:<br />
1. Preheat oven to 350 degrees. Grease 9&#8243; by 9&#8243; metal baking pan.</p>
<p>2. In large bowl, with mixer at low speed, beat butter and sugar until mixed, occasionally scraping bowl with rubber spatula. Increase speed to high; beat until light and fluffy.</p>
<p>3. With mixer at low speed, beat in egg yolks until well combined, constantly scraping bowl with rubber spatula. Add flour and salt and beat until blended, occasionally scraping bowl. With spoon, stir in walnuts.</p>
<p>4. With lightly floured hands, pat half of dough evenly into bottom of pan. Spread strawberry preserves over dough. With lightly floured hands, pinch off 3/4-inch pieces from remaining dough and drop over preserves; do not pat down.</p>
<p>5. Bake 45 to 50 minutes until golden. Cool completely in pan on wire rack. When cool, cut into 3 strips, then cut each strip crosswise into 10 pieces.</p>

<p>1 c. raisins<br />    1 c. butter<br />    3/4 c. sugar<br />    3/4 c. brown sugar<br />    2 eggs<br />    1 1/2 c. whole wheat flour<br />    1 tsp. baking soda<br />    1/4 to 1/2 tsp. salt<br />    1/2 tsp. nutmeg<br />    1/2 tsp. cinnamon<br />    2 c. oatmeal<br />    1/2 c. chopped walnuts<br />    1/2 c. mini chocolate chips</p>
<p>Cream sugars and butter until light and fluffy. Add eggs. Stir in flour, baking soda, salt, and spices. Last add oatmeal, nuts, and chocolate chips. Drop by teaspoonfuls onto cookie sheets. Bake at 350 degrees for 10-12 minutes. Cool. Makes about 6 dozen.</p>

A single brownie comes in at 85 calories and 2.1 grams of fat. The big problem with these beauties is sticking to one &#8220;bite&#8221;.</p>
<p>Ingredients:
<ul>
<li>1/4 cup butter, softened</li>
<li>1 large egg</li>
<li>2 large egg whites</li>
<li>1 teaspoon vanilla</li>
<li>1 teaspoon instant coffee granules, dissolved in 1 teaspoon water</li>
<li>1 cup flour</li>
<li>1/2 cup cocoa</li>
<li>1/4 teaspoon baking powder</li>
<li>1/4 teaspoon salt</li>
</ul>
<ol>
<li>Preheat oven to 350 F</li>
<li>In a large bowl, mix together butter and sugar until well combined. Add egg, egg whites, vanilla and coffee and stir until well blended and smooth.</li>
<li>In a separate bowl, combine the dry ingredients. Add to the egg mixture and stir by hand until just combined.</li>
<li>Spoon into mini-muffin cups that have been sprayed with non-stick spray.</li>
<li>Bake for 12 - 15 minutes, until puffed up, but still soft to touch. Do not over bake!</li>
<li>Cool in the pan on a wire rack.</li>
</ol>
<p>Makes a dozen or so brownies.</p>
