<p>Special equipment: mini muffin tin</p>
<p>Preheat the oven to 350 degrees F.</p>
<p>Combine the crushed chocolate wafers and the melted butter. Place a tightly packed teaspoon of the wafer mixture into each mini-muffin cup and press down firmly.</p>
<p>In a food processor combine the ricotta cheese, cream cheese, 1/4 cup of the sugar, half of the orange zest, and the egg. Blend until smooth. Lightly grease the sides of the mini muffin tin with butter. Fill the cups with about 1 1/2 tablespoons of the cheesecake mixture. Place the mini muffin tin in a baking dish and pour enough hot water in the baking dish to come halfway up the sides of the mini muffin tin. Bake for 25 minutes. Transfer the mini muffin tin to a wire rack and let cool for 30 minutes. Refrigerate for 15 minutes. Use a small knife to gently pop the cheesecakes out of the cups.</p>
<p>Just before serving, combine the remaining orange zest with the remaining 2 tablespoons of sugar. Top each individual cheesecake with about 1/4 teaspoon of the orange zest mixture and serve.</p>

<p>My wife&rsquo;s youngest daughter Andrea&nbsp;has taken to cake making and produced this Louis Vuitton purse cake for her sister&rsquo;s birthday.</p>

<p>Apart from one afternoon class in working with fondant, she&rsquo;s had no formal training in baking or decorating. She does watch <a title="Ace of Cakes Food Network" href="http://www.foodtv.ca/ontv/titledetails.aspx?titleid=104804" rel="tag">Ace of Cakes</a> faithfully and has picked up a lot of tips from the show.</p>
<p>For example, this week&rsquo;s episode, <a title="Four Weddings and a Rat" href="http://www.foodnetwork.com/food/show_db/episode/0,3100,FOOD_26996_48612,00.html">Four Weddings and a Rat</a>, Duff gives a tip for mixing the silver&nbsp;with vodka to create &ldquo;paint&rdquo;. The alcohol evaporates quickly, leaving it dry. Andrea took the same approach with the gold that she used to decorate the purse.</p>

<li>Let stand in pan for 5 minutes before turning out onto wire rack to cool completely.</li>
</ol>
<p>Makes 12 muffins.</p>

Ingredients:

1 cup plus 2 tablespoons cake flour
3/4&#160;cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup grated carrots
1/2 cup&#160; raisins
1/4 cup&#160; walnuts
1/4 cup shredded&#160; coconut
1 apple; diced
2 eggs, well beaten
1/2 cup applesauce
1 teaspoon vanilla

Directions:

Pre-heat oven to 350 and grease 12 muffin cups.
In a large bowl, combine flour, sugar, baking soda, cinnamon and salt.

We decided to try Bob Blumer&#8217;s Schamburger cake&#160; for a birthday dinner today. The &#8220;hamburger is made using two white cakes as the bun, a brownie (recipe below)&#160;as the meat patty, mango puree as mustard, raspberry puree as ketchup, green and yellow jello as relish&#160;and sliced almonds as sesame seeds.

<div>1/2&nbsp; teaspoon&nbsp; salt</div>
<div>1&nbsp; cup&nbsp; butter</div>
<div>1&nbsp; cup cocoa powder</div>
<div>2&nbsp; cups&nbsp; sugar</div>
<div>4&nbsp; &nbsp; eggs</div>
<div>1 1/2&nbsp; teaspoons&nbsp; vanilla</div>

<p><span class="head5">Directions:</span><br />1. Mix all-purpose flour, baking powder, and salt in a bowl. </p>

<p>2. Melt butter in a saucepan. Remove from heat. Stir in cocoa powder. Blend in sugar, eggs, and vanilla. </p>

<p>3. Blend in dry ingredients and chopped nuts. </p>
</p>
<p>4. Pour batter into greased 13X9X2 inch pan. Bake at 350F 30 to 35 minutes.</p>
