Irish Stew

1 Ib mutton or beef
2 Ib potatoes
1/2 Ib onions
1/2 Ib carrots
1 sprig parsley, chopped
salt and pepper to taste
1 cup water or beef stock
Directions:
Cut the meat into medium size chunks.
Peel and slice the vegetables.
Put the meat, vegetables and parsley into a pot in layers. Start and finish with the potatoes.
Pour stock over the meat and vegetables. [...]
