Dried Cherry Vinaigrette

Ingredients:
- 1/2 c. olive oil
- 2 shallots, finely chopped
- 1/3 c. sherry or red wine vinegar
- 1/4 c. pitted unsweetened dried cherries or cranberries, chopped
- salt and freshly ground black pepper
Directions:
- heat the olive oil in a skillet over medium heat.
- Add the shallots and sauté for about 2 minutes, or until softened.
- Add the vinegar and boil for 1 minute.
- Add the dried cherries, salt and pepper, and heat through for one minute longer.
- Taste and adjust for seasoning.
