Dried Cherry Vinaigrette

Ingredients:

  • 1/2 c. olive oil
  • 2 shallots, finely chopped
  • 1/3 c. sherry or red wine vinegar
  • 1/4 c. pitted unsweetened dried cherries or cranberries, chopped
  • salt and freshly ground black pepper

Directions:

  1. heat the olive oil in a skillet over medium heat.
  2. Add the shallots and sauté for about 2 minutes, or until softened.
  3. Add the vinegar and boil for 1 minute.
  4. Add the dried cherries, salt and pepper, and heat through for one minute longer.
  5. Taste and adjust for seasoning.
