Simple Raspberry Gelato

Raspberry gelato

Ingredients:

  • 1.5 lbs fresh or frozen raspberries
  • 3/4 cup sugar
  • 3/4 cup whipping cream
  • 1.5 quart ice-cream freezer

Directions:

  1. Thoroughly chill ice cream freezer container according to manufacturer’s directions.
  2. Puree berries in food processor.
  3. Strain the puree to remove seeds.
  4. Add sugar to berries and mix well.
  5. Place berry puree into ice cream freezer container, and run freezer for about 10 minutes.
  6. Meanwhile, whip cream until light and fluffy. (About 2 minutes.)
  7. While the freezer is running, add cream to berry mixture.
  8. Run freezer for remainder of recommended freezing time. With my freezer that’s another 20 - 25 minutes.
  9. Transfer gelato from freezer container to storage container and place in freezer for an hour, to firm up.
  10. Serve.

    7 is not possible for ice and salt freezers. I’m not familiar with any other kinds of freezer and in fact only just heard about them a couple weeks ago. What should one do? Opening the container during freezing is a BAD plan because it can leak salty water into the gelato/ice cream, and removing the container is a pain because then all the ice has to be dumped out and put back in. Any way around this?

    Rosie, I’m not sure. I use an electric ice cream freezer. There is a hole in the top which allows for adding ingredients later in the process. For example, once the mixture is partially frozen, chocolate chips could be added.
