Banana Ginger Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 cup brown sugar, packed
  • 3 tablespoons minced crystallized ginger
  • 1/2 cup rolled oats
  • 2 large ripe bananas, mashed
  • 1 large egg, fork beaten
  • 1 1/4 cups buttermilk
  • 2 tablespoons vegetable oil
  • 1/4 cup maple syrup
  • 3 tablespoons brown sugar, packed

Directions

  1. Combine first 6 ingredients in large bowl. Make a well in centre.
  2. Mix next 5 ingredients in medium bowl. Pour into well. Stir until just moistened. Do not over mix.
  3. Fill greased muffin cups 3/4 full. Sprinkle with second amount of brown sugar. Bake in 375 F oven for 20 to 25 minutes until golden brown and wooden pick inserted in centre of muffin comes out clean.
  4. Let stand in pan for 5 minutes before turning out onto wire rack to cool completely.

Makes 12 muffins.
