Curried Lentils

Ingredients:

  • 1 tbsp. plus 1 tsp. extra virgin olive oil
  • 1 onion, diced
  • 1 tbsp. curry powder
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/4 tsp. turmeric
  • 1 19-ounce can lentils, drained and rinsed
  • 1 28-ounce can diced tomatoes
  • 4 cloves garlic, minced
  • 4 cups baby spinach leaves

Directions:

  1. Heat a medium saucepan over medium heat. Add olive oil and onion. Saute for two minutes.
  2. Add curry powder, cumin, coriander and turmeric. Mix well. Cook for one minute, stirring constantly.
  3. Add lentils and diced tomatoes. Stir well. Bring to a boil.
  4. Cover and reduce heat. Simmer for 15 minutes, stirring occasionally.
  5. Remove lid and turn heat to medium. Add garlic and mix well.
  6. Add spinach and stir until it wilts. Serve. Makes five cups.
