Ingredients:
- 1 tbsp. plus 1 tsp. extra virgin olive oil
- 1 onion, diced
- 1 tbsp. curry powder
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/4 tsp. turmeric
- 1 19-ounce can lentils, drained and rinsed
- 1 28-ounce can diced tomatoes
- 4 cloves garlic, minced
- 4 cups baby spinach leaves
Directions:
- Heat a medium saucepan over medium heat. Add olive oil and onion. Saute for two minutes.
- Add curry powder, cumin, coriander and turmeric. Mix well. Cook for one minute, stirring constantly.
- Add lentils and diced tomatoes. Stir well. Bring to a boil.
- Cover and reduce heat. Simmer for 15 minutes, stirring occasionally.
- Remove lid and turn heat to medium. Add garlic and mix well.
- Add spinach and stir until it wilts. Serve. Makes five cups.
