2 tablespoons butter or margarine
1 medium onion, chopped
1/2 pound white or cremini mushrooms, coarsely chopped
3 tablespoons all-purpose flour
2-1/2 cups mushroom, chicken, or beef broth
2 tablespoons dry sherry (optional)
1/3 to 1/2 cup half-and-half, cream, or milk
Salt to taste, about 1/2 teaspoon
Freshly ground black pepper to taste
