Middle Eastern Dish – rice with lentils and onions.

Ingredients:

  • 2  each  large onion, thinly sliced
  • 2  Tbsp  oil
  • 2¾  cup  water
  • ½  cup  brown lentils
  • 1  cup  Basmati rice
  • 1  tsp  salt
  • ¼  tsp  black pepper

Directions:

  1. Saute the onions in a non-stick pan until dark brown.
  2. In a medium pot boil the water. Add lentils and simmer for 20 minutes.
  3. Add rice, fried onions, salt and black pepper. Mix the ingredients in the pot.
  4. Bring to boil again, and simmer additional 30 minutes.
