Middle Eastern Dish – rice with lentils and onions.
Ingredients:
- 2 each large onion, thinly sliced
- 2 Tbsp oil
- 2¾ cup water
- ½ cup brown lentils
- 1 cup Basmati rice
- 1 tsp salt
- ¼ tsp black pepper
Directions:
- Saute the onions in a non-stick pan until dark brown.
- In a medium pot boil the water. Add lentils and simmer for 20 minutes.
- Add rice, fried onions, salt and black pepper. Mix the ingredients in the pot.
- Bring to boil again, and simmer additional 30 minutes.
