Oven Roasted Brussel Sprouts

Nic’s recipe calls for fresh Brussel sprouts and that’s the best option. However, you can improve the flavour of frozen Brussel sprouts by oven roasting.
I rub the foil-lined baking sheet with a thin coating of olive oil, spread the frozen, whole sprouts on the sheet, drizzle with more olive oil and salt and pepper to taste. I bung the baking sheet into a 400F oven and roast for 8 – 10 minutes, turning the sprouts halfway through. It’s a big improvement over the soggy, steamed product most people serve.

Slice the sprouts in half lengthwise, removing any loose, outer leaves and trimming the bottom stems.
Toss sprouts in a little bit of olive oil and add salt and pepper, to taste. Spread cut side up in a single layer on a foil-lined baking sheet.
Bake 400F for 30-40 minutes, until browned.
