My favourite Christmas cookie

Ingredients:

  • 1 cup butter/margarine
  • 1 package instant chocolate pudding (4 serving size)
  • 1 egg
  • 2 cups all purpose flour
  • 1/4 cup sugar
  • apricot jam
  • 1/2 cup semi-sweet chocolate chips
  • 3 Tablespoons butter/margarine

Directions:

  1. Preheat oven to 325 degrees.
  2. Cream butter and pudding mix together.
  3. Beat in egg.
  4. Mix in flour.
  5. Shape into small balls, roll in sugar and place on greased baking sheet.
  6. Make a dent in each ball with your thumb.
  7. Bake for 5 minutes, remove cookies from oven and press dent again. Continue baking for 10 more minutes.
  8. Fill dent with apricot jam.
  9. Melt chocolate and butter in saucepan over low heat, stirring frequently.
  10. Glaze top of cooled cookie with melted chocolate.
