Man hands out healthy eating tips to trick-or-treaters

From weapons of war to great coffee

In his workshop in Mekele, just 200km from Ethiopia’s border with Eritrea, Azmeraw Zekele is turning burnt-out shells into cylinders used in coffee machines.
Most of the shells are left over from the 1998-2000 war between the two countries.

Fire ’n Suds Chili

3 lb boneless beef chuck steak, cubed
1 1/2 cups chopped onions

Butter Chicken Recipe

2 to 3 tablespoons of butter
1 onion, halved and sliced
1/4 teaspoon cinnamon
2 cloves garlic, crushed
2 teaspoons freshly grated ginger
1/2 teaspoon ground turmeric
2 teaspoons chilli powder
1 tablespoon fresh coriander
1 pound skinless, boneless chicken thighs or breasts, cubed
1/3 cup ground almonds
10 oz can whole peeled tomatoes with juice
1 tablespoon tomato paste
1/2 cup plain yogurt

Grilled Red Pepper Sauce

Ingredients:

2 medium red bell peppers, cut in half and seeded
2 tablespoons extra virgin olive oil
3/4 teaspoon salt
1/4 teaspoon cayenne
2 cloves garlic
3 tablespoons chicken broth
2/3 cup whipping cream
2 tablespoons chopped fresh basil

Directions:

Coat grill with non-stick cooking spray
Pre-heat grill to medium-high, direct heat
Combine olive oil, salt and cayenne and brush on pepper halves and garlic cloves

Fresh Lime Salsa

Ingredients:

1 cup diced jicama
1 orange peeled and coarsely chopped
1/4 cup finely chopped red bell pepper
1 green onion, thinly sliced
2 teaspoons of lime zest, chopped
2 tablespoons fresh lime juice
2 teaspoons canola oil
1 teaspoon sugar

Directions:

Combine all ingredients in a medium bowl and toss to mix.
Cover and refrigerate for at least 1 hour
Serve with grilled chicken or fish
