Good Morning Muffins
Ingredients:
- 2 cups flour
- 1 1/4 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 cups grated carrot
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup medium shredded coconut
- 2 cups chopped apple
- 3 large eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
Directions
- Pre-heat oven to 350 F and grease 18 muffin cups
- In a large bowl combine the dry ingredients
- Stir in the carrot, raisins, walnuts, coconut and apple
- In a separate bowl, beat the liquid ingredients.
- Stir into the flour mixture until batter is just combined. Do not over mix.
- Spoon into muffin cups, filling to the top.
- Bake for about 25 minutes or until a tooth pick inserted in the centre of a muffin comes out clean.
