Good Morning Muffins

Ingredients:

  • 2 cups flour
  • 1 1/4 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups grated carrot
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup medium shredded coconut
  • 2 cups chopped apple
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract

Directions

  1. Pre-heat oven to 350 F and grease 18 muffin cups
  2. In a large bowl combine the dry ingredients
  3. Stir in the carrot, raisins, walnuts, coconut and apple
  4. In a separate bowl, beat the liquid ingredients.
  5. Stir into the flour mixture until batter is just combined. Do not over mix.
  6. Spoon into muffin cups, filling to the top.
  7. Bake for about 25 minutes or until a tooth pick inserted in the centre of a muffin comes out clean.
