Low-Fat One-Bite Brownies
Lynette has posted a delicious looking recipe for low-fat Chocolate Espresso Cookies that I have placed high on my baking to-do list.
One of my favourite low-fat chocolate treats is the One-Bite Brownie recipe from Julie Van Rosendaal's recipe book Grazing
. A single brownie comes in at 85 calories and 2.1 grams of fat. The big problem with these beauties is sticking to one "bite".

Ingredients:
- 1/4 cup butter, softened
- 1 large egg
- 2 large egg whites
- 1 teaspoon vanilla
- 1 teaspoon instant coffee granules, dissolved in 1 teaspoon water
- 1 cup flour
- 1/2 cup cocoa
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Preheat oven to 350 F
- In a large bowl, mix together butter and sugar until well combined. Add egg, egg whites, vanilla and coffee and stir until well blended and smooth.
- In a separate bowl, combine the dry ingredients. Add to the egg mixture and stir by hand until just combined.
- Spoon into mini-muffin cups that have been sprayed with non-stick spray.
- Bake for 12 - 15 minutes, until puffed up, but still soft to touch. Do not over bake!
- Cool in the pan on a wire rack.
